Keto Yeast Dough Recipe: This is the Easiest Keto Dough (A.K.A. Fathead), I’ve ever made! Furthermore, this is the type of dough I use for pizza, cinnamon rolls – flatbead and so much more; Made with almond flour, the perfect blend flour, mozzarella cheese, cream cheese, baking powder, yeast, organic maple syrup, sea salt, and an egg. Hot out of the oven, it is crispy on the outside and moist on the inside. Moreover, the texture and flavor are so delicious, you won’t even miss eating regular bread. What is more, when I came across this recipe, I was so ecstatic and was dancing in mind; while yelling,” I can have bread” over and over again. I was feeling a bit depressed when I changed my eating habits, to a Healthier Keto Lifestyle.

This Low-Carb dough is crispy on the outside and moist on the inside. The texture and the flavor are perfect for any recipe that requires a type a crust or bread; like low-carb wraps, pizza crust, pizza rolls, bagels, bread and yes-even pretzels.

You can expect the keto bread with yeast to be extra soft. Plus, with less than half the amount of eggs as your usual low carb bread recipe, this non eggy sandwich will surely become a staple! It is in our house!

The yeast in this low carb and keto bread ensures a wonderful texture and taste. 

When using some of the ingredients at room temperature will ensure as much rise for the bread.

Proof the yeast. This involves mixing dry active yeast with water that’s just warm to the tough (between 105-110 degrees F to be precise) and insulin (which is fully keto) or an actual sugar (by using maple syrup or honey) for 7 minutes to bloom. And remember sugar is what the yeast needs to feed on, the sugar emits carbon dioxide, so it doesn’t affect the carb count. And yes, this is a scientific fact. 

What you will need:

  • baking pan/sheet
  • parchment paper

  • rapid yeast packet
  • Allulose granulated or liquid
  • Johnny’s Garlic Bread Spread Seasoning (optional)

How to make keto yeast dough

First: In a medium-size microwaveable bowl – add mozzarella cheese and flours mix together. Add cream cheese. Place in microwave for at least 30 seconds. It just needs to be warm enough, to stick together while mixing together. It it cools, place it in the microwave for a few minutes.

Second: Add flours, baking powder, yeast and sea salt. Mix together until well combined.

Third: Add beaten egg and water. Fold in carefully. The texture will be course, loose and dry at first. Mix until it forms a ball.

Ingredients:

  • 2 cup Almond Flour
  • 1/4 cup The Perfect Blend Flour (optional)
  • 1 cup Mozzarella Cheese
  • 2 tablespoons Cream Cheese
  • 1/4 cup collagen peptide
  • 1 rapid yeast packet
  • 1 teaspoon Allulose granulated or liquid
  • 2 tablespoon psyllium husk powder
  • 2 teaspoons xanthan gum
  • 3 tablespoon warm water
  • 1 teaspoon Johnny’s Garlic Bread Spread Seasoning (optional)
  • 1 Egg, beaten

Directions:

  1. Line the 8.5 x 4.5-inch loaf pan with parchment pan
  2. In a medium-size microwaveable bowl – add mozzarella cheese and flours mix together. Add cream cheese. Place in microwave for at least 30 seconds. It just needs to be warm enough, to stick together while mixing together.
  3. Preheat oven 350 degrees F.
  4. Add flours, baking powder, yeast, and sea salt. Mix together until well combined.
  5. Add beaten egg and water. Fold in carefully. The texture will be course, loose and dry at first. Mix until it forms a ball.

Notes:

If you prefer, Coconut Flour can be swapped out for Almond Flour.

Here’s some of the herbs I use when I make this dough for pizza; rosemary, basil, dill, chives, caraway, fennel, sage or thyme.

To fry it, once shaped, place in the fridge for at least 20 minutes. This will make it easier to handle and will hold together well.

When baking, for a crispier crust, bake at least 5 minutes more. Watch carefully.
