Beef and Broccoli with oyster sauce is one of my favorite Asian dishes. And, is made with soft and tender bites of flank steak, fresh broccoli, garlic, onion, Tamari (low-sodium soy sauce), oyster sauce, sesame oil, salt, white pepper. Don’t worry, you can always improvise with any of your favorite veggies. However, this is an incredibly easy fast dish to prepare and cook.

What is the Best Cut of Beef for Stir Fry?

The best beef cuts for stir fry are tender and lean. We love Flank Steak which is lean and easy to chew when thinly sliced against the grain.

Many stir fry recipes have gone wrong with a poorly made sauce. With countless years of cooking our favorite recipes and cooking for a big family (10 people), we’ve learned to perfect how we prepare, assemble and cook every meal. However, this is the perfect balance of sweet and savory. For best stir fry sauce:

  • Use low-sodium soy sauce like Tamari or Coconut Aminos.
  • Use the right amount of fresh ginger – it’s truly a very strong flavor, so don’t overdo it.
  • Do not skip the sesame oil as it gives authentic flavor. However, I prefer Toasted Dark Sesame Oil.
  • Simmer sauce for at least 3 minutes to mellow out garlic and ginger.
  • For a thinner sauce, add 2 Tbsp water at the end.

What is Coconut aminos? A salty, savory seasoning sauce made from the fermented sap of coconut palm and sea salt. However, it is similar in color and consistency to light soy sauce, making it an easy substitute in recipes.

What is Oyster sauce? A sauce made with oysters and soy sauce used especially in Chinese cooking. On the other hand, has a stronger, saltier flavor with more subtle notes of caramelized sweetness.

  5. May drastically lower blood sugars and improve heart disease risk factors

Health benefits of Sesame oil?

Sesame oil contains vitamin E, which can help protect skin cells from damage caused by environmental factors, such as UV and pollution, etc. In fact, it’s rich in omega-6 acids. Omega-6 fatty acids play an important role in heart disease prevention.

What is Velveting?

Velveting is a Chinese cooking technique used to protect delicate meat and keep meats from becoming dry and tough. Usually, the meats are coated in marinade seasoning, cooking rice wine, arrowroot (cornstarch), sometimes egg white, and oil. Then, the meats get quickly cooked in hot oil or hot water.

Why use Arrowroot?

As a matter of fact, Arrowroot is high in protein, gluten-free, low glycemic index, has a high concentration of potassium, and is anti-inflammatory. And, is a nutritious substitute for cornstarch, because it acts similarly to cornstarch but contains more dietary fiber. It also forms a clear gel when mixed with water, so it’s great for thickening clear liquids. Not to mention, Arrowroot flour also contains more calcium than cornstarch.

How to Ensure Tender Beef?

The right cut can make all the difference in a stir fry. Here are a few tips to achieve tender beef:

  • Freeze steak for 30 minutes for easier slicing.
  • Use a sharp knife to cut super thin slices against the grain.
  • This is for stir-frying method: add steak to a hot skillet to sear and seal juices.
  • Don’t overcrowd the pan or it cools quickly and will steam cook.

YOU WILL NEED:

  • large frypan
  • Flank Steak
  • Arrowroot
  • Baking soda
  • Olive oil
  • Sesame oil
  • Garlic
  • Ginger
  • Tamari (low-sodium soy sauce) or coconut aminos (soy sauce substitute)
  • Oyster sauce
  • white wine
  • Allulose brown sweetener
  • Broccoli
  • Carrots
  • Sesame seeds
  • greens onions for garnish

How To Make BEEF and Broccoli

First, measure out all ingredients and get it ready for marinating, add into the crock pot or slow cooker; olive oil, minced garlic, and ginger, coconut aminos, arrowroot (or cornstarch) water, and Allulose brown sweetener. Stir ingredients together until well incorporated.

Second, Cut flank steak into thin strips. Place the flank in the crock pot or slow cooker. Mix well until beef is well. Once coated, add the steak to the marinating mixture in the crockpot or slow cooker.

Third, you will be cooking the Beef and Broccoli with Oyster sauce on Slow for 4-5 hours until cooked throughout and tender.

However, this is the time to adjust the thickness of the sauce if it is too thin. To thicken the sauce, take 2 tablespoons of arrowroot and 3 tablespoons of water and mix well and add to beef and broccoli.

Next, in the last 15 minutes of the cooking time, add broccoli and any of your favorite veggies to the slow cooker. However, I find the vegetables will continue to cook the longer it sits in the sauce.

Last but not least, when you are ready to serve, place a generous serving of the beef and broccoli over steamed rice and garnish with green onions and toasted sesame seeds. Enjoy!

Beef and Broccoli

INGREDIENTS

  • 1-1/2 pounds Flank Steak
  • Medium yellow onion, quartered
  • 3-4 Garlic cloves, peeled and minced
  • 1/4 tsp Ginger, peeled & minced
  • 1 tablespoon Kikkoman cooking rice wine
  • 2 tablespoon arrowroot
  • 1/4 teaspoon baking soda
  • 2 tbsp Olive oil
  • 1/4 cup Tamari (low-sodium soy sauce) or coconut aminos (soy sauce substitute)
  • 1/2 cup Oyster sauce
  • 1/2 cup water
  • 3 tablespoons Allulose brown sweetener
  • 1 tsp Toasted Sesame oil
  • 2 cups Broccoli
  • 1 cup carrots, sliced thin like slivers (optional)
  • Toasted Sesame seeds
  • 1 bunch of greens onions for garnish

INSTRUCTIONS

  1. Measure out into the slow cooker; olive oil, garlic and ginger, Tamari (low-sodium soy sauce) or coconut aminos (soy sauce substitute), water, Allulose brown sweetener. Stir ingredients together until well incorporated.
  2. Cut flank steak into thin strips. Place the flank in a medium-sized bowl or Ziploc bag along with the arrowroot. Mix or Shake to coat. Once coated, add the steak to the slow cooker and stir again until coated in the sauce. Set aside.
  3. Add carrots and onions (except broccoli) to the crock pot.
  4. Cook on High for 2 hours or Low for 4-5 hours until cooked throughout and tender.
  5. However, this is the time to adjust the thickness of the sauce if it is too thin. Take 2 tablespoons of arrowroot and 3 tablespoons of water and mix well and add to beef and broccoli.
  6. In the last 15 minutes of the cooking time, add broccoli to the slow cooker.
  7. Serve over steamed rice and garnish with green onions and toasted sesame seeds.

NOTES:

  • Freeze the flank for easier cutting. This method is so much easier when cutting the beef. If you freeze the flank steak until semi-frozen, it’ll be much easier to cut into thin, even slices. However, just let the beef thaw after slicing to drain excess moisture.
  • Cut the flank into no thicker than 1/4 inch slices. Too thin and the meat will fall apart. Although, it’s important that the flank slices are not too thick. Otherwise, it’ll take longer to cook and can turn out tough and dry.
  • More Flavor. For more flavor, I prefer to add beef broth like Better Than Boullion Beef Flavored or Beef Bone Broth.
  • Cook the broccoli to your preferred tenderness. However, you can adjust how long to boil the broccoli, depending on how tender you like it. Also, the boiling time depends on how big you cut the broccoli florets.
  • To Store. Keep leftovers in the refrigerator for up to 4 days.
  • To Reheat. Warm gently in the microwave or on the stovetop with a splash of beef broth or water to keep it from drying out.
  • To Freeze. Store in an airtight container for up to 2 months in the freezer. Defrost overnight in the refrigerator before warming.
