Sausage Kale Egg Casserole
Ingredients:
Preheat oven to 350° degrees. Prepare a 9X13 baking pan by spraying with oil.
- 12 eggs
- 2 pounds mild breakfast sausage
- 1 onion, sweet walla onion, chopped
- 1 cup of mini sweet peppers seeded and chopped
- one bundle of fresh Kale or 1 cup spinach (Optional)
- 1/4 cup Guyvere cheese, grated
- 1 cup mozzarella cheese, shredded
- 1/2 cup heavy whipping cream
- 1 cup half and half
- 1 teaspoon Johnny’s Garlic Spread seasoning
- 1 teaspoon Johnny’s all-purpose seasoning
- 3 garlic cloves, minced
- 1/2 teaspoon thyme
- 1 cup cheddar cheese (topping)
- teaspoon parsley
Directions:
- If using a crust; assemble crust as directed and bake for 10 minutes.
- While the crust is baking; Heat a medium-sized frying pan, and cook the breakfast sausage until brown. Drain fat. set aside.
- Using the same pan, add olive oil, and garlic, and cook until golden brown.
- Add sweet onions, and cook until translucent. Add sausage, breaking it up into smaller pieces. Cook for 3 minutes. Set aside.
- Take a medium-sized bowl; add eggs, flour, seasonings, and cheeses.
- Take the 9X13 prepared pan, and carefully pour the egg mixture over the veggies and cheese.
- Top casserole with cheddar cheese.
- Bake for 35 – 50 minutes or until the edges are set and the center is just barely jiggly.y
- Leftover egg casserole can be stored in the fridge and enjoyed within the next 3-4 days.
For the crust:
- 1-1/4 cup almond flour
- 1 cup of the perfect blend flour
- 1/2 cup mozzarella cheese
In a small bowl, place the shredded cheese in the microwave for 30 seconds. Add flour to the cheese and mix well. Press into the prepared baking dish. Bake for 10 minutes.
NOTES:
Vegetables might like to use; have fun and mix it up; roasted red bell peppers, roasted garlic, broccoli, etc.
Other cheeses to use; medium cheddar cheese, swiss cheese, and cream cheese.
Storing the Sausage Kale Egg Casserole; Leftover egg casserole can be stored in the fridge and enjoyed within the next 3-4 days.
To freeze the casserole; You can freeze the egg casserole. Carefully wrap in a saran wrap and then place in freezer bags for up to a month.
