Sausage Kale Egg Casserole

Sausage Kale Egg Casserole is just as delicious as in my Kale Sausage Soup. These types of recipes you can make ahead are quick and easy. I love quick and easy dishes and so very delicious. Although, this is fast becoming my favorite breakfast to make for a hungry crowd, especially for 10 people in our family. In addition, it makes great mini muffins for a quick on-the-go breakfast for the week. However, if you are lactose intolerant, you can replace the half and half, whipping cream, or sour cream with Almond milk or oat milk, etc.

Easy Breakfast Casserole

Here’s another amazing kale recipe made with simple ingredients like savory mild breakfast sausage, sun-dried tomato, Guyvere cheese, and mozzarella cheese. And, I do enjoy a variety of veggies and will cook as it bakes in the oven. This casserole can be made with or without a crust.

Oftentimes, I will make this Sausage Kale Egg Casserole makes a great brunch idea for the weekend or Christmas Day. It’s a hearty, comforting, yet healthy kale breakfast recipe that everyone will love.

I love making breakfast casseroles on the weekends that will last us into the week for a couple of easy breakfasts. Unfortunately, this Sausage Kale Egg Casserole isn’t one of those dishes. That’s because there were hardly any leftovers!

Ingredients in the Sausage Kale Egg Casserole




<p><strong>If using a crust;</strong> assemble crust as directed and bake for 10 minutes.</p>



<p><strong>Cook meat:</strong> While the crust is baking; Heat a medium-sized frying pan, and cook the breakfast sausage until brown. Drain fat. set aside.</p>



<p><strong>Using the same pan</strong>;  add olive oil, and garlic, and cook until golden brown. Add sweet onions, and cook until translucent. Add sausage, breaking it up into smaller pieces. Cook for 3 minutes. Set aside.</p>



<p><strong>Make the egg mixture:</strong> Take a medium-sized bowl; add eggs, flour, seasonings, and cheeses.</p>



<p><strong>Assemble Casserole: </strong>Take the 9X13 prepared pan, and carefully pour the egg mixture over the veggies and cheese. Top casserole with cheddar cheese.</p>



<p>Bake for 35 – 50 minutes or until the edges are set and the center is just barely jiggly.</p>



<p>Leftover egg casserole can be stored in the fridge and enjoyed within the next 3-4 days. </p>

Ingredients:

Preheat oven to 350° degrees. Prepare a 9X13 baking pan by spraying with oil.

  • 12 eggs
  • 2 pounds mild breakfast sausage
  • 1 onion, sweet walla onion, chopped
  • 1 cup of mini sweet peppers seeded and chopped
  • one bundle of fresh Kale or 1 cup spinach (Optional)
  • 1/4 cup Guyvere cheese, grated
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup heavy whipping cream
  • 1 cup half and half
  • 1 teaspoon Johnny’s Garlic Spread seasoning
  • 1 teaspoon Johnny’s all-purpose seasoning
  • 3 garlic cloves, minced
  • 1/2 teaspoon thyme
  • 1 cup cheddar cheese (topping)
  • teaspoon parsley

Directions:

For the crust:

  • 1-1/4 cup almond flour
  • 1 cup of the perfect blend flour
  • 1/2 cup mozzarella cheese

In a small bowl, place the shredded cheese in the microwave for 30 seconds. Add flour to the cheese and mix well. Press into the prepared baking dish. Bake for 10 minutes.

NOTES:

Vegetables might like to use; have fun and mix it up; roasted red bell peppers, roasted garlic, broccoli, etc.

Other cheeses to use; medium cheddar cheese, swiss cheese, and cream cheese.

Storing the Sausage Kale Egg Casserole; Leftover egg casserole can be stored in the fridge and enjoyed within the next 3-4 days.

To freeze the casserole; You can freeze the egg casserole. Carefully wrap in a saran wrap and then place in freezer bags for up to a month.
