Mandarin Fried Chicken Wings

The Best Mandarin Fried Chicken Wings I’ve ever tasted. This sweet and spicy dish is made with air-fried chicken wings, honey, brown sugar, garlic, ginger, and spices,–I fell in love with and I knew what my next mission in life was!!! I was in Lake City, Washington at Seven Seas Chinese Restaurant having a wonderful visit with my sister when she introduced me to the wonderful selection of food she had tried. But (SHHH), don’t tell anyone or they will all want you to make some. It is time-consuming, but well worth it–with your first bite. You will need to cut out a time in a day or just take the day off when making this.

Now that I know how to fry my wings without oil and with a handy air fryer. It’s going to be so much easier to make Mandarin Fried Chicken Wings.

There is several steps in making Mandarin Fried Chicken Wings. You will first be air frying the wings, then coat them with the sweet and spicy sauce.

**Make sure to pat chicken dry before seasoning. Once you season and coat chicken you will place them on the cooling rack in a single layer and place in a fridge for at least 30 minutes. For a thicker coat, place in coat mix again and dust off excess.

**Air-Fryer Method: The wings are first air-fried on medium heat to cook the interior and then the heat is turned up to 400F to crisp up the skin. The result is chicken wings that are soft and tender on the inside and super crispy on the outside.

**Bake in the conventional oven or Oster Convection Oven on 375°  degrees for 30 minutes.

Why Baking Powder?

Baking powder; Using Baking Powder is optional since you are using an Air Fryer. And, if you pat the chicken wings dry with a paper towel real well. Furthermore, it’s a mixture of sodium bicarbonate, cream of tartar, and cornstarch. Moreover, when mixed with salt and coated on chicken it dries out the skin, leaving it extra crispy and crunchy.

You will need:

  • 2 lbs chicken wings
  • almond flour
  • perfect blend flour
  • baking powder
  • 6 garlic gloves
  • Johnny’s all-purpose seasonings
  • honey 
  • rice wine vinegar
  • whole chili peppers
  • tongs
  • air fryer

INGREDIENTS:

  • 2 lbs chicken wings, fresh if possible
  • 1 cup Almond or All-purpose flour
  • 1/2 cup Rice Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Johnny’s all-purpose seasoning
  • 6 garlic cloves, minced
  • 1 teaspoon Ginger, peeled & minced
  • 1 tablespoon Soy sauce
  • 1/2 cup Brown sugar
  • 1 cup Honey
  • 1 cup Rice wine vinegar
  • 4 Chili peppers, whole
  • 2 tablespoon olive oil
  • 1 bundle Green Onions, chopped
  • Toasted Sesame seeds

Instructions:

  1. First, rinse chicken, pat dry.
  2. Season with Johnny’s.
  3. Coat with flour mixture.
  4. Place on cooling rack in a single layer. Place in the fridge. 30 minutes to 1 hour. Take out and coat a second time. In the meantime, make the sauce.
  5. Heat a saucepan, add olive oil. 
  6. Add minced garlic until lightly brown and fragrant.
  7. Then add chili peppers and ginger.
  8. Reduce heat to medium-low. Add honey and brown sugar and rice wine vinegar. Simmer for 30 minutes.
  9. Garnish with Green onions and toasted sesame seeds.
NOTES

When Air Frying – **Do not overlap wings. Giving the wings enough room will allow them to cook evenly and crisp up all around. Using a large air fryer will allow you to achieve the best result in just 1 round.. Great for a large family or crowd.

** I love lots of garlic and with every Johnny’s Seasonings container we buy, I would add an addition of granulated garlic.
