Delicious Penny Meatloaf

This Delicious Penny Meatloaf is made with ground beef, garlic, onions, peas and carrots, eggs, the perfect blend flour, Heinz ketchup, Ray’s Bbq Sauce. I love this recipe, its moist and easy to make; Tonight is meatloaf night. Make this Delicious Penny Meatloaf, its very good. I use to make this with Lipton Onion soup mix, until I found that the monosodium glutamate in it triggers my asthma.

Growing up we didn’t have a lot of money, so we used whatever was in our pantry. This includes basic foods like peanut butter & jelly sandwiches, fried bologna sandwiches, spaghetti and Top Ramen. With 9 people in the family, we made do with whatever went the farthest. I love the fact you just dump all the ingredients into a large bowl, mix well and press into a 9 X 13 pan with a layer of combination of ketchup and BBQ Sauce. When I have time I try to make this as low sodium and low sugar as possible. So I’ve included both recipes. And yes, sometimes I use a crock pot.

Delicous Penny Meatloaf Recipe

Delicious Penny Meatloaf

Ingredients:

  • 2 lbs ground beef
  • 1 Lipton soup mix, envelope
  • 1 cup frozen peas and carrots
  • 1/2 cup onions, chopped
  • 2 garlic cloves, minced (or 1 tablespoon jarred minced garlic)
  • 1/2 teaspoon ground pepper
  • 1 cup bread crumbs
  • 2 tablespoon mustard
  • 2/3 cup half and half (milk)
  • 2 eggs
  • 1/4 cup ketchup

For Topping: In a small bowl, mix together ketchup and Barbecue sauce. Spread over entire meatloaf. 

Directions:

Preheat oven 350 degrees. Bake 50 minutes to 1 hour.

Place all ingredients in a medium-size bowl and mix well with a large spoon, until well incorporated. Spread meatloaf mix in a 9 X 13 pan. Spread topping over entire meatloaf. Place in the middle rack and bake for 1 hour.

Low Carb Meatloaf

Thank goodness garlic is healthy for you. My Dad would eat the whole garlic clove with his food. I do love lots of garlic in my food, but I prefer it cooked. Unless I am eating

Ingredients:

  • 2 lbs ground beef
  • 1/2 cup perfect blend flour, organic
  • 1 cup frozen peas and carrots
  • 1/2 cup onions, diced
  • 3 garlic, cloves, minced
  • 1/4 cup Sundried Tomatoes, diced
  • 1 tablespoon Johnny’s Seasoning 
  • 1 teaspoon dried thyme 
  • 3/4 teaspoon basil
  • 2 tablespoon Worcestershire sauce
  • 2 teaspoon mustard powder
  • 1/4 cup no-sugar tomato sauce
  • 1 egg

Directions:

  1. Preheat oven 350 degrees. Bake for 50 minutes or 1 hour.
  2. Coat a 9 X 13 glass pan with cooking oil spray.
  3. Place all ingredients in a large bowl and mix well with hands or a large spoon.
  4. Take the prepared pan and add the meat mix, spread evenly meeting all edges.
  5. Then adding topping on top spread evenly over the meatloaf.
  6. Place meatloaf in the middle rack of the preheated oven and bake for 1 hour.
For Topping: Mix together the tomato sauce and no-sugar barbecue sauce until well blended.

Notes:

  • With all my recipes I constantly use Johnny’s seasoning in almost everything I cook, less if I am using low-sodium soy sauce; because it contains most of the ingredients I use in all my recipes minus the herbs.
  • Whenever I buy a new Johnny’s seasonings I’ll mix more granulated garlic in it. You can never have enough garlic.
  • Italian meatloaf – add oregano, Italian seasoning, rosemary
  • Cheeseburger meatloaf – hide cheese inside which will melt when cooked, serve with homemade ketchup.
  • Mexican style meatloaf – add coriander, cumin, chillis, red chili pepper flakes. Serve with Avocado and Salsa.
  • Toppings – grated cheese, bacon pieces or slices, parmesan, mozzarella.
  • Other veggies – finely diced mushrooms, celery, grated zucchini, chopped spinach,

What wine goes with meatloaf?

Our favorite choice would either be a medium-bodied Cabernet Sauvignon, or Merlot with a bit of spiciness to it. Meatloaf tends to be a little dry. For myself, I do enjoy a Pinot Griggio from my Exclusive Member Wine Club, which would be the perfect pairing for this dish.
