What is Dry-Aged Beef?

Dry-aging is a precisely managed technique where substantial portions of the animal, known as “primal” muscle groups (such as an entire rib section rather than a single ribeye steak), are exposed to controlled environmental conditions for a specific duration, including regulated temperature, airflow, and humidity. Dry-aging yields two primary effects: firstly, it leads to moisture loss, which, in turn, intensifies the beef’s flavor by concentrating it.

What is Double-Aged Beef?

Our beef undergoes a meticulous dry-aging process, lasting a minimum of two weeks following processing. Additionally, our cattle are raised to a more advanced age, a minimum of four years. In contrast, conventionally raised, corn-fed beef from industrial sources is typically slaughtered as young as six months old, depriving it of the opportunity to develop a mature flavor. Furthermore, the confinement of cows in feedlots hinders the development of flavorful locomotion muscles.

This gradually cultivated intramuscular fat is greatly sought after and can also be found in premium, highly sought-after Wagyu steaks (although Wagyu cattle are not raised on grass). They take pride in referring to this splendid marbling of yellow fat as our “grass-fed gold.” The taste of the sumptuous, deep-red meat, a product of dry aging, combined with the stunning golden fat, a result of our approach to raising cattle, is unparalleled and leaves an indelible impression.
