Best White Bean Soup with Italian Sausage

This is an easy and budget-friendly midweek family meal that is healthy and delicious and can be made in just 20 minutes. It’s gluten-free and packed with protein. I always have a few cans of these on hand in the pantry for those times that I am not in the mood to cook.

Sometimes, a bowl of savory and hearty soup fits the bill for a comforting meal. And this white bean soup is not your average bowl of soup, this is a delicious and awesome Italian white bean soup with a big bold flavor. Everyone loves it!

ARE WHITE BEANS GOOD FOR YOU?

If you are wondering if white beans are healthy and good for you, the answer is yes! Cannellini beans are low on calories but loaded with minerals, antioxidants, and fiber.

Plus, these white beans are a terrific source of vegetarian protein and they’re highly filling, making them a very weight-loss-friendly food.

Plus, if you enjoy this cannellini soup with some whole-grain bread, you’ll get plenty of fiber!

WHAT INGREDIENTS YOU NEED:

  • Mild Italian Sausage
  • cannellini or great Northern beans
  • Olive Oil, Extra Virgin
  • Onion
  • Carrots
  • Celery
  • Garlic
  • chicken broth
  • parmesan rind
  • fresh kale
  • Diced Tomatoes with Italian Seasoning
  • fresh Rosemary
  • White Wine
  • Braggs Apple Cider Vinegar
  • chili flakes
  • Kosher Salt
  • Ground pepper

HOW DO YOU MAKE WHITE BEAN SOUP?

In a large skillet, brown the meat until thoroughly cooked. Drain fat.

Place cooked meat and the rest of your prepared ingredients, except for the kale, in the crockpot. Set the mode to slow cook.

In the last 10 minutes of the cooking time add the kale.

You can enjoy the soup right away or let it sit for a while so it gets more creamy and thick.

When ready to plate, garnish (optional)with parsley and a little shredded parmesan and crusty bread. Enjoy!

WHITE BEANS

You can use cannellini beans, navy beans, Great Northern beans or any white beans. However, for more flavor and texture, I find that the dried cannellini beans are the better choice here.

FLAVOR

Fresh garlic, fresh and aromatic Italian parsley, chilly flakes, and robust extra virgin olive oil make this savory cannellini soup really amazing. Don’t use dry stuff, if you can, they won’t work as well.

TEXTURE

I love how filling a creamy soup can be and such a yummy texture, for this reason, I often add a cubbed potato. During cooking, the potato will break down releasing starch, and if you slightly mash the soft potato cubes with a wooden spoon occasionally, that makes the soup even thicker. Delicious!

HOW LONG DOES IT KEEP?

This easy white bean soup keeps well in the fridge, in an airtight container for up to 3-4 days.

It’s also freezable: divide among airtight containers (leaving 1-inch space at the top), and freeze up to 2 months.

Ingredients

1 pkg Mild Italian Sausage
1 lb dried (or 2 cans) cannellini or ===>>>great northern beans
2 T Olive Oil, Extra Virgin
1 1/2 c. Onions, diced
1/2 c Carrots, diced
1 c Celery diced
2T Garlic, fresh & chopped
4 c chicken broth
4 c water
2 dried Bay Leaves
1 parmesan rind
6 c fresh kale, chopped
1 – 15 oz. Diced Tomatoes with Italian Seasoning
1 tsp fresh Rosemary, fresh, minced
1/4 cup White Wine
1 1/2 tsp Braggs Apple Cider ===>>>Vinegar

1/4 tsp chili flakes
1 tsp Kosher Salt
Ground pepper to taste

Notes:

  • Italian Sausage: If you prefer, swap out the Hot Italian Sausage or chicken in the soup.
  • The best broth: is Better than Boullion which gives each recipe a wonderful true chicken broth flavor. If you prefer you can use bone broth.
  • Kale: If need be, you can use Frozen kale instead of fresh.
  • Can I use dry beans? Yes, you can use dry beans, but I would recommend making them in advance and then adding to the soup. For 3 cans of beans, I recommend 2-1/4 cups dried beans. You can cook them in an instant pot or on the stove according to package instructions.
  • Can I freeze the white bean soup? Yes, this soup freezes very well, so you can certainly make a big batch and freeze them for up to 3 months. I recommend freezing in individual portions for easier thawing.
