Delicious Flourless Fudge Brownies

I don’t know anyone that can resist fudge brownies (not me). Remember Death by Chocolate, Yummy! Enjoy amazing Delicious Flourless Fudge Brownies without the guilt, and they are sinfully good. Though, this recipe is a one-bowl method. Wait until you taste the Delicious Flourless Fudge brownies, one bite and you will be hooked on this recipe.

The name “Bangor Brownie” appears to have been derived from the town of Bangor, Maine, in which an apocryphal story state was the hometown of a housewife who created and citing the publication of a brownie recipe in a 1905 Fannie Farmer cookbook. And, in its second edition, The Oxford the original brownie recipe.

Delicious Flourless Fudge Brownies

Maine food educator and columnist Mildred Brown Schrumpf was the main proponent of the theory that brownies were invented by “Bangor housewives,” from Bangor, who had created the brownie, citing the publication of a brownie recipe in a 1905 Fannie Farmer cookbook. And, in its second edition, The Oxford Encyclopedia of Food and Drink in America (2013) said it had discovered evidence to support Schrumpf’s claim, in the form of several 1904 cookbooks that included a recipe for “Bangor Brownies”.

Bangor Brownies

  • 1/4 cup butter
  • 1-cup brown sugar
  • 2 eggs
  • 3 ounces unsweetened chocolate
  • 1/2 cup flour (to make these gluten-free I used 1/4 cup millet flour and 1/4 cup cornstarch)
  • 1/2 cup chopped nuts
  • 1/4 teaspoon salt

Why is there no baking powder or baking soda in these brownies? Adding baking powder or baking soda lifts brownies up and creates a cakier result. But, today, we all want a brownie so dense and fudgy that it’s basically. 

You’ll get a taste of how dense these brownies are when you’re mixing up the batter. It’s so thick and so fudgy. Seriously fudgy.

How to Check Brownies for Doneness

This can be tricky, so here’s how to determine when these brownies are done. Turn the timer 30 minutes as soon as the brownies go into the overn. Once you begin to smell that captivating scent of chocolate permeate through the kitchen, check the brownies. Even if this is at the 25-minute mark. Use a toothpick, stick it into the center, and pull it out. The brownies need more time if there is a wet batter on the toothpick. If there are a few moist crumbs on the toothpick, the brownies are done. You don’t want a clean toothpick!

Delicious Fudge Brownies

INGREDIENTS

  • 1 cup sugar
  • 1/4 cup butter
  • 1 egg, unbeaten
  • 2 squares unsweetened chocolate, melted
  • 1/2 cup the all-purpose flour
  • 1/2 cup walnuts, cut into pieces

Mix ingredients in order given. Line a seven-inch square pan with paraffin paper. Spread mixture evenly in pan and bake in a slow oven. As soon as The brownies are taken from the oven, turn from the pan, remove the paper, and cut the cake in strips, using a sharp knife. If these directions are not followed paper will bling to cake, and it will be impossible to cut it in shapely pieces.

We’ll be using Organic Perfect Blend Flour, Organic Cacao Powder (or unsweetened Baker’s Chocolate), sea salt, baking powder, Allulose, instant espresso coffee, cream cheese, half and half, eggs, vanilla, and pecans.

In this recipe, I use both the Bakers baking chocolate and the Organic Cacao powder, because it makes a richer dark chocolate flavor.

You can get away with not adding the cocoa powder, but if you are like me and love dark chocolate; it helps to intensify the chocolate flavor.

My first memory was when I was watching my Mom pull out fresh-baked bread from the oven. She sliced me a piece and slathered butter on… YUMMY!!!  Brings back such wonderful memories. The other memory is my aunt teaching us how to decorate a giant size shortbread cookie for Christmas.

Ingredients:

Directions:

  1. Prepare a 9 X 13 pan, coat with oil spray
  2. Place the Bakers baking chocolate squares in a microwaveable bowl and butter and place in the microwave for 2 minutes or until melted. Set aside to cool for at least 10 minutes.
  3. Preheat oven 350 degrees F.
  4. Using a medium-size bowl. Add All ingredients into the bowl starting with the dry ingredients.
  5. In the middle of the dry ingredients make a little well and start adding all of the wet ingredients. Mix well with a hand mixer or spoon. Lastly, add the chocolate mix.
  6. Pour batter into the prepared baking pan. However, place the brownies in the middle rack. Bake 350 degrees for 24 minutes, or until you insert a toothpick, and it comes out with fudgy crumbs. 

For Fudge Buttercream Frosting:

  • 1 Baker’s Baking Squares (4oz)
  • 2 tbsp Organic Cacao powder 
  • 2 cups Allulose Powdered Sugar sweetener or Monk Fruit
  • 1 cup butter, chilled 
  • 2 teaspoon Vanilla Extract
  • 1/4 cup Heavy whipping cream

Directions:

Take 4 Bakers unsweetened chocolate squares and place in a small microwaveable bowl, microwave for two minutes. Let cool for at least 10 minutes before adding the rest of the ingredients. While the chocolate is cooling. Take butter, cut it into small cubes, this will make it easier to cream with a hand mixer. Add 2 tablespoon Cacao powder, teaspoons of vanilla extract, and 1/4 cup heavy whipping cream. Add the melted chocolate and continue blending well with a hand mixer or spoon. Gradually add Allulose or Monk Fruit a little at a time.

Notes:

For Cream Cheese Brownies: In a small mixing bowl, add 1 cup cream cheese, 2/3 cup swerve and an egg blend well. Set aside. You will add this last. And, once the Brownie batter is in the pan you will drop big tablespoon drops of the cream cheese mix on top. Then you will take a butter knife, and insert, vertically into the batter half-way and slide it through the batter in a zig-zag pattern. However, place the brownies in the middle rack and bake as directed above.

When making the frosting, chill the butter first, it helps to produce a stiffer texture when the frosting is finished. However, it makes for the most lightest and airy frosting that is perfect for piping and decorating cupcakes or cake.
